DO NOT LET WATER RUN OUT. boil until milk is caramel color( you can open can and peek and reseal with foil if not done). beat smooth on a mixer. there's your dulce de leche( it's better than any you buy already made and cheaper too). ganache- chocolate of your choice( i use high quality chocolate chips. ) and heavy cream heated to boil( ratio 2 parts chocolate one part heavy cream.). pour boiling hot cream over chips or chopped chocolate. throw on mixer low speed and beat- it will set in firmness this way. smear top of cooled cheesecake with cooled dulce de leche. over a cookie rack pour ganache-(ganache is best made a day ahead. you can microwave it until it will pour and stick right)- over cake. you may have to pour twice popping in freezer between coatings. refrigerate. mittens’s dulce de leche cheesecake
