    MERRY CHRISTMAS TO ALL! One of the “perks” of being mayor of NYC, is you are forced, by politics, to attend Midnight Mass at St. Patrick’s. For one such as the current mayor, who has quite publicly rejected the teachings of the Catholic Church, it must be a bit painful. Afterall, he managed to avoid meeting with the Pope when he toured Italy (even Nancy Pelosi was smart enuf not to do that!!!) Sitting there, with the other phoney baloney politicians like pro-abortion Cuomo, makes you wonder at the ways of God and how it is possible to reach the most hardened souls. May the Holy Spirit plant a seed of grace in all their hearts, may the new year bring about a conversion, an epiphany, an awareness of the bounty we have been granted as Americans and our responsibility to nurture and promote the fundamental rights of life, liberty and the pursuit of happiness we claim as ours through Divine Providence. And may we continue to stand up and speak out and at least nudge them in the right direction.

    gender-neutral celebration of the winter solstice holiday, practiced within the
    most enjoyable traditions of the religious persuasion of your choice, or secular
    practices of your choice, with respect for the religious/secular persuasion
    and/or traditions of others, or their choice not to practice religious or
    secular traditions at all. I also wish you a fiscally successful, personally
    fulfilling and medically uncomplicated recognition of the onset of the generally
    accepted calendar year 2015, but not without due respect for the calendars of
    choice of other cultures whose contributions to society have helped make America
    great. Not to imply that America is necessarily greater than any other country
    nor the only America in the Western Hemisphere. Also, this wish is made without
    regard to the race, creed, color, age, physical ability, religious faith or sexual preference of the wishee.

    Has anyone ever seen a more pathetic image of a leader? I thought Kerry on his bicycle was bad, but this is a million times worse.

    Wanted to share a different take on this traditional green bean casserole.

    Green Bean Casserole
    Prep Time: 20 Minutes Cook Time: 30 Minutes Difficulty: Easy Servings: 8

    Ingredients
    2 pounds Fresh Green Beans, Ends Cut Off
    4 slices Bacon, Cut Into 1/4 Inch Pieces
    3 cloves Garlic, Minced
    1/2 whole Large Onion, Chopped
    4 Tablespoons Butter
    4 Tablespoons All-purpose Flour
    2-1/2 cups Whole Milk
    1/2 cup Half-and-half
    1-1/2 teaspoon Salt, More To Taste
    Freshly Ground Black Pepper, To Taste
    1/8 teaspoon Cayenne Pepper
    1 cup Grated Sharp Cheddar Cheese (or less to taste)
    1 jar (4 Ounce) Sliced Pimentoes, Drained
    1 cup Panko Bread Crumbs
    Chicken Broth If Needed For Thinning

    Preparation Instructions
    Cut green beans in half if you like pieces to be a little smaller.
    Blanch the green beans: drop them into lightly salted boiling water and allow green beans to cook for about 3 to 4 minutes. Remove them from the boiling water with a slotted spoon and immediately plunge them into a bowl of ice cold water to stop the cooking process. Drain beans once they’re cool and set aside.
    Add bacon pieces to a skillet over medium heat. Cook bacon for two minutes, then add diced onion and garlic and continue cooking for 3 to 5 minutes, or until bacon is done (but not crisp) and onions are golden brown. Remove from heat and set aside.
    In a separate skillet or saucepan, melt butter over medium heat. Sprinkle flour into the pan and whisk immediately to evenly mix it into the butter. Cook for a minute or two, then pour in milk and half and half. Continue cooking, whisking constantly, while sauce thickens, about 2 minutes. Add salt, pepper, and cayenne then add the grated cheddar. Stir while cheese melts. If sauce is too thick, splash in some chicken broth as needed. Turn off heat.
    Add pimentos to pan, then add bacon/onion mixture. Stir to combine. Pour over green beans and stir gently to combine. Pour into a baking dish and top with panko crumbs.
    Bake at 350 degrees for 30 minutes or until sauce is bubbly

    I’ve been unplugged for a few days, so this is a little late. I hope you all had a great Christmas and will have a great new year. I got hosed out of my vacation this week. My job is killing me slowly. I have a bad cold. It was hot and humid in Florida on Christmas eve. But, I had a very nice Christmas with the family. May God bless this nation in the coming new year.

    Hi Tammy, I have been supporting you for years, but I fell out of the habit of listening. My New Year’s resolution is to get back in the habit! I am a Libertarian/Conservative teacher in New York City, and voices like yours are the only one’s that keep me sane! Thank you for all you do. Happy New Year!
